Bile salts are primarily used in biological experiments as selective bacteriostatic agents, with their main function being to inhibit the growth of Gram-positive bacteria while allowing or only slightly suppressing Gram-negative bacteria. This property stems from its ability, as a surfactant, to disrupt bacterial cell membranes. Gram-negative bacteria, however, exhibit strong resistance due to the presence of lipopolysaccharides in their outer membrane. Therefore, bovine bile salts are widely used in the preparation of selective media for intestinal bacteria (such as MacConkey agar and SS agar) to isolate and detect enteric pathogens like Escherichia coli and Salmonella. Additionally, they are commonly employed to assess the bile salt tolerance of probiotics, such as lactic acid bacteria.
